When Tim and Cass McNeil established Tim McNeil Wines, Tim had long since given up his teaching career, graduating with a degree in oenology from the University of Adelaide in '99. He then spent 11 years honing his craft at important wineries in the Barossa and Clare valleys. In '10 Tim McNeil Wines became his full-time job. The McNeils’ 16ha property at Watervale includes mature dry-grown riesling. The cellar door overlooks the riesling vineyard, with panoramic views of Watervale and beyond. -JAMES HALLIDAY
