Karin Adcock is a Danish-born and -educated entrepreneur with the gift of making the difficult seem easy. Scandinavian design of things large or small, utilitarian or simply decorative gave her a head start in Australia. In '16 she purchased what was then Poole's Rock, assembling teams of experts to rejuvenate the 11ha vineyard and embark on a long-term program for the whole property. The property has expanded since and is complemented by artworks, antiques and artefacts, notably sculptures, collected by Adcock from around the world. Buildings on the property have also been converted into residences large and small for tourists who stay overnight. Needless to say, Winmark's wine is part and parcel of the business. Consultant John Belsham, a New Zealander, has an impeccable track record of 35 years of experience with a focus on chardonnay and dealing with the uncertainties of working in a climate that can change for the worse in a matter of hours. -JAMES HALLIDAY

Winmark have converted the former Pooles Rock wine storage sheds into their new, yet authentic Cellar Door ensuring the history of the property is cherished.
The space connects the working 28 acre vineyard with a beautifully designed space nestled in sandstone surrounds to enjoy and showcase the Winmark Chardonnays.

Nestled alongside the vineyards Winmark offers four distinctive getaway retreats from a laid-back hideaway to a luxury estate, each one a place of remarkable beauty and unexpected discovery. Winmark can accommodate 36 guests across the property, from Villa Vino an intimate tiny villa for 2, to Rock View overlooking the vineyard accommodating 10 guests, Mio Monte with two wings and a tennis court based at the foot of the mountain accommodating 14 guests and The Residence by private appointment accommodates 8.
